November: Start of Winter, Minor Snow and winter tonics
Start of Winter falls around 7 or 8 November, and Minor Snow around 22 or 23 November, when light snow begins in the north. Temperatures drop sharply in northern China, the northeast already has snow on the ground, and many northern cities switch on central heating around mid-November. The Yangtze region moves from autumn into winter with occasional cold surges, and southern China and Hong Kong turn cool and dry. In Taiwan the northeast monsoon strengthens, leaving the north damp and cool while the centre and south stay dry and sunny.
In Taiwan, Start of Winter is the day for buzhong, 'nourishing for winter', when many families cook sesame-oil chicken, ginger duck or mutton stew. The Lower Yuan Festival on the fifteenth day of the tenth lunar month usually falls in November, or early December in years with a leap month, and honours the Official of Water. Some rural communities in Taiwan hold thanksgiving rites after the harvest to repay the gods for a safe year. There are no major public holidays this month in Taiwan, Hong Kong or mainland China.
With the harvest in and food plentiful, rural families once favoured this season for weddings, and autumn and winter remain popular. Dumplings are eaten at Start of Winter in the north, while the south begins curing meat and making sausages for the New Year. Taiwanese fishermen have a saying that grey mullet arrive with Minor Snow and Major Snow, as the fish follow the cold currents south. Traditional advice favours early nights, later mornings and keeping warm.
